Recipe of the Week: New Year Glow Overnight Oats 🌟
Begin 2025 with a beauty-focused breakfast that's both delicious and beneficial for your skin. These protein-rich overnight oats are loaded with ingredients that support collagen production, reduce inflammation, and promote that coveted New Year glow!
Ingredients:
- Base:
- 1/2 cup old-fashioned rolled oats
- 2/3 cup unsweetened almond milk
- 1/4 cup plain Greek yogurt
- 1 tbsp chia seeds
- 1 scoop collagen peptides (optional)
- 1 tsp honey or maple syrup
- Toppings for Radiant Skin:
- 1/4 cup mixed berries (fresh or frozen)
- 1 tbsp pumpkin seeds
- 1 tbsp goji berries
- 1 tbsp hemp hearts
- 1/2 tbsp bee pollen (optional)
- Fresh mint leaves for garnish
Instructions:
1. In a mason jar or container, combine oats, almond milk, yogurt, chia seeds, collagen peptides (if using), and honey.
2. Stir well to combine.
3. Cover and refrigerate overnight or at least 6 hours.
4. In the morning, stir the mixture and add a splash of milk if too thick.
5. Top with berries, seeds, goji berries, hemp hearts, and bee pollen.
6. Garnish with mint leaves.
